There is a small farm owned by a friend who recently sang the praises of Arugula, so I decided to purchase a small sample ; today I am hooked on the green, it seems that many restaurants are also hooked, as it is now imported by the supermarkets.
I have never used the seeds or flowers but they are edible. The leaves can be eaten raw and as part of a normal salad plate.
Arugula -also known as salad rocket, Italian cress and rucola originated in the Mediterranean; it belongs to the same classification as bro coll, kale, brussel sprouts, cauliflower and kale, the leaves are tender with a tangy flavor

(swede or neep, a cross between the cabbage and the turnip.)
Arugula contains dietary nitrate which researchers has found to lower blood pressure and reduce the amount of oxygen need during exercise thus enhancing athletic performance; this raises a question for professional athletes. What will be the verdict for the athletics governing bodies when an athlete knows how to eat healthy with a focus on enhancing performance; and improving muscle oxygenation during exercise.
Research has also shown that there is a certain chemical in arugula that may help slow the progression of cancer.
The more research I undertake the more evidence I discover that education on plant based diet can save the world billions in health care cost, and improve production by creating a world of healthy, longer living population; which will pose a disturbing question ; Why are we racing towards a world of automation?
Research is proving over and over that increasing consumption of a plant diet of fruits, vegetable and certain herbs reduces the risk of many diseases including heart disease, cancer, diabetes and obesity and would produce a more healthy, energetic producing population.
Researchers have known for years that consuming a substantial amount of cruciferous vegetables has been associated with lowering the risk of cancer with focus on lung and colon and prostate and possibly pancreatic cancer.
